Sometimes, no matter how many healthy foods you eat, you just don’t feel satisfied. That nagging sweet tooth keeps throbbing like it was an actual toothache. You try your best to ignore it, but eventually you’re going to cave and when you do you better hope that only one doughnut is left in the break room and not the entire box.
It doesn’t have to be this way though. Baking your own snacks for the week is a great alternative to buying bags of salty chips and boxes of sugar-filled cookies at the grocery store. These peanut butter chocolate chip muesli cookies are a quick, easy, and delicious substitute that will definitely satisfy your sweet tooth.
We used Evoke Super Muesli, but Morning Zen or Athlete Fuel would taste great too!
Prep Time: 15 minutes
Bake Time: 10-15 minutes
Yield: 15 – 20 cookies
1.5 Cups Evoke Super Muesli
2/3 Cup Creamy Peanut Butter
1.5 Cups Flour
2/3 Cup Brown Sugar
1 Cup Semi-Sweet Chocolate Chips
6 Tbsp Butter, Softened
1 Tbsp Vanilla
1 Tbsp Baking Soda
Pinch of Salt
Step 1: Preheat oven to 350 degrees
Step 2: Combine ingredients, mixing with a spoon until fully blended
Step 3: Cover baking sheet with parchment or spray with baking spray
Step 4: Scoop mixture my the spoonful onto the baking sheet, flattening each cookie slightly and leaving 1-2 inches between each cookie
Step 5: Bake for 12 minutes or until the outer edges of the cookies are bronze
Step 6: Remove cookies from the oven and let cool for 3-5 minutes
Step 7: Transfer cookies from the baking sheet to a cooling rack and let cool completely
Step 8: ENJOY!
